Green beans are always available at wet markets or supermarkets throughout the year in Malaysia. The garlic green beans and carrot recipe calls for just a few ingredients: green beans, carrots and minced garlic. Carrot is added to this recipe for its nutritional benefits and beautiful colour to brighten up the dish. I am going to introduce a Chinese cooking technique in this green beans recipe. I will do a quick stir-fry for the green beans to ensure the crispiness of the texture and to maintain the vibrant green colour. Another way to cook green beans is “dry-fried”, the green beans will become wrinklier and slightly brownish in colour if we “dry-fried” the green beans. Both methods are great and delicious ways to cook fresh green beans.

I am using an aluminium alloy wok. It has excellent thermal conductivity and distributes heat evenly, great for stir-frying.
