Crispy fried shallots (炸油葱酥) is one of the must-have condiments in Chinese cuisine. You can use it in soup, rice dishes, meat dishes, dumplings, vegetable dishes, noodles, and just about everything in between. Crispy fried shallots are familiarly used in most of the Asian dish. This crispy fried shallot was taught to me by my grandmother who always made her own crispy fried shallots for all her cooking at home.

Crispy fried shallots are easy to make. The most difficult part to make this condiment is when peeling and slicing the shallots. Once the peeling and slicing work is done, the frying process is easy. You can put the shallot oil and the fried shallots together in a glass jar OR put it separately. The shallots oil is infused with the nice aroma of shallots. It adds such incredible flavor and aroma to the food! You can use the shallot oil to fry the vegetables or cook the meats. Below are some of the recipes using this fantastic condiment:

How to make the Crispy Fried Shallots?

  • Peel shallots. Then rinse and drain it.
  • Slice shallots thinly and uniformly to ensure even cooking.
  • Heat enough oil for deep-frying in a wok. Add the sliced shallots to the oil and deep-fry until lightly golden brown and crispy. Always stir around the edges of the wok to avoid burnt shallots.
  • Drain the fried shallots on kitchen paper.
  • Put the fried shallots in an airtight container after it fully cooled.

Crispy Fried Shallots Tips

  • Please remember to ensure pre-heated the oil before you add the shallots. You may put a piece of shallots in the oil and it should sizzle lightly if there is enough heat.
  • The actual time of frying shallots is depended on the oil temperature. You need to observe the colour of shallots to see if it has already done. Please remember to avoid over-frying, burnt shallots will have a bitter taste.
  • The heat of the stove may need to be adjusted during cooking to ensure it is always at optimum heat.
