Mulberry mistletoe lotus seed soup (桑寄生莲子鸡蛋茶) is an inexpensive healthy dessert that only requires mulberry mistletoe, white lotus seed, eggs, and red dates. The dish is cooked in a pot and it takes about 1 hour and 10 minutes to be prepared.

Recipe Ingredients
The recipe simply calls for:
- 50 gram Dried Mulberry mistletoe
- 2 eggs – you may add in extra if you like to eat eggs.
- 6 red dates
- 30 gram white lotus seeds – remember to remove the bitter sprout inside the white lotus seed.
- 30 gram rock sugar – this is optional. You may skip the rock sugar if you feel the natural sweetness of red dates is enough.
How to Cook Mulberry Mistletoe Lotus Seed Soup?
- Boil two eggs.
- Soak the white lotus seed and remove the bitter sprout inside it.
- Soak the dried mulberry mistletoe in the boiled water for 30 minutes. Rinse and drain it. Set aside.
- Wash and remove the red dates seeds.
- Bring a pot of water (about 2 liters) to boil.
- Add in all the ingredients (Mulberry mistletoe, red dates, white lotus seeds). Bring it to boil and using medium heat simmer for 20 minutes.
- Add in boiled egg and using medium-low heat simmer for 40 minutes.
- Add in rock sugar 10 minutes before turn off the heat.
- Done and serve immediately.
