After that, you need to cook the noodles for 5 minutes, until the texture is chewy, then rinse and drain under cold water. After that, you may proceed to the next step with your recipe.

Next best is fresh yellow noodles that are about 3mm thick. You may buy it from the groceries or wet market, which is normally put in the fridge section. Besides dried egg noodles and fresh yellow mee, you can also make chow mein with any other noodles. For example, spaghetti, thick, thin, fresh mee, instant noodles, or ramen noodles.

How to make the Chow Mein?

  • Boil a pot of water. Put in the dried egg noodles (dried mee), soak it for 5 minutes or until soft. Drain it.
  • Heat oil in a wok.
  • Add garlic and stir fry for 10 seconds or until it turns to lightly golden brown.
  • Add baby corn and choy sum stir-fry for 30 seconds or until the choy sum soft.
  • Add the shrimp. Stir-fry for 30 seconds.
  • Add salt and sugar. Stir-fry for 1 minute. Add 200 ml water, soy sauce and oyster sauce, bring the water to boil.
  • Add noodles and dark soy sauce. Stir-fry for 1 minute.
  • Remove from heat and serve immediately.
