Recipe Ingredients
- Cucumber (250 gram)
- 4 limes
- 1 tsp salt
- 1 chilli
- 1 1/2 tbsp sugar
How to make the Pickled Cucumber?
- Wash the cucumber and remove its seeds. Cut the cucumber into thin slices.
- Add salt to the cucumber slices and mix evenly. This step will draw the moisture content in the cucumber out and make the cucumber texture become more crunchy. Put aside for 15 minutes. Squeeze the excess water. Drain it. Wash the cucumber slices to remove the excess salt.
- Add lime juice, sugar and chili to the cucumber. Stir to blend well and chill in the fridge before serving.

Normally I used the small Persian cucumbers. The smaller the cucumber is, the better the texture.
