Recipe Ingredients
The recipe calls for:
- Half Chicken
- Old Ginger
- Yellow Glutinous Rice Wine
- Water
- Sesame Oil
- Salt
- Dried Black Fungus
- Dried Mushroom
Glutinous Rice Mijiu (Nuòmǐ jiǔ) 糯米黄酒 is made from the fermentation of sticky or glutinous rice and is considered a form of huangjiu. Apart from clearing the odour of raw fish or meat and accent the flavour of food, it is resistant to high temperatures and can withstand long-term cooking. It is very suitable for braising and stewing meat products, such as this famous yellow wine chicken dish.
Yellow Glutinous Rice Wine Chicken Recipe
- Heat up the wok with sesame oil. Add old ginger, stir fry it until lightly golden and fragrant.
- Add the wood ear and dried mushrooms, stir fry for 2 minutes. Add chicken pieces, cook for 5 minutes until the chicken pieces are lightly brown.
- Then add in yellow glutinous rice wine, bring to a boil.
- Turn the heat low after the boil, cover the lid and simmer for 15 minutes. Stir it occasionally.
- Serve immediately.
Yellow Glutinous Rice Wine Chicken Cooking Tips
- Please be careful when you pour in the rice wine and close the lid. The fire may burn the lid of the pot/wok if it is boiling because the alcohol vapour is surrounding the pot/wok. If it happens, turn off the fire and put a wet towel on the lid. After that, turn the fire on again.

Yellow Glutinous Rice Wine Chicken
Ingredients
- 700 gram chicken pieces
- 15 gram wood ear soaked and julienned
- 15 gram dried mushroom soaked and julienned
- 60 gram old ginger
- 250 ml yellow glutinous rice wine
- 75 ml water
- 1 1/2 tbsp sesame oil
- 1/2 tbsp salt
Instructions
- Heat up the wok with sesame oil. Add old ginger, stir fry it until lightly golden and fragrant.
- Add the wood ear and dried mushrooms, stir fry for 2 minutes. Add chicken pieces, cook for 5 minutes until the chicken pieces are lightly brown.
- Then add in yellow glutinous rice wine, bring to a boil.
- Turn the heat low after the boil, cover the lid and simmer for 15 minutes. Stir it occasionally.
- Serve immediately.
