Sambal Stink Beans with Prawns

Sambal Stink Beans with prawns (叁巴臭豆炒虾), a.k.a Sambal Petai Udang in Malay, is a popular dish in Malaysia. This dish has one of the best combinations of spicy chilli paste, stink beans (petai) and prawns and tastes great with Nasi Lemak or even just with steamed white rice. It is a very appetizing and delicious side dish and very popular in all cuisines, including Malay, Chinese, and Nyonya. This killer dish of sambal stink beans with prawns is definitely one of the most popular and mouth-watering dishes on any family's dining table.

Ingredients

  • 1 cup Stink Beans approximate 6 pods
  • 6 Prawns medium size
  • 15 gram Dried Prawn
  • 5 slices Ginger
  • 10 gram Garlic minced chop
  • 1 Onion medium size (cut in slices)
  • 3 Small Onion minced chop
  • 1 pack Sambal Manggi brand Sambal Tumis

Seasoning Ingredients

  • 3 tbsp Cooking Oil
  • 1 tbsp Oyster Sauce
  • 1/2 tbsp Sugar
  • 1 tsp Salt
  • 2 tbsp Water

Instructions

  • Prepare the prawns by peeling off the head and shell and wash it.
  • Peel the stink beans out of the outer shell and remove the skin (in beige color). Cut each stink bean into half.
  • Cut the ginger and onion into slices. Chop the garlic and small onion until finely minced.
  • Heat a wok with 2 tbsp of oil over medium heat. Once the wok is hot, add the ginger, garlic, and small onion. Stir-fry for 1 minute. Add 1 tbsp of oil and dried prawns. Stir-fry for 1 minute or until the aroma come out. Add Sambal and stir-fry for 1 minute. Add 2 tbsp water, oyster sauce, and sugar. Stir-fry for 1 minute.
  • Add the prawns and stir-fry. Add the stink beans after the prawns change color. Stir-fry for 2 minutes. Add onion and stir-fry for 30 seconds. Add some salt to increase for favor.
  • Done and serve immediately.
