Savory Breakfast Crepes

Savory breakfast crepes are also known as Egg and Scallion Crepes or Ji Dan Bing (鸡蛋饼) is a simple yet healthy breakfast. This is a typical Chinese-style breakfast that requires minimum ingredients and preparation, which is only all-purpose flour, chopped scallion, egg, and water needed. These Egg and Scallion Crepes are great with a bowl of rice or some dipping sauce. It can be sweet soy sauce, Chinese chili oil, etc. In today's recipe, I will add some of the chicken meat floss to make the crepes more aromatic.

Ingredients

  • 35 gram All-purposes flour
  • 10 gram Scallion chopped
  • 2 Egg
  • 1 tsp Salt
  • 125 gram Water
  • 25 gram Chicken Meat Floss
  • cooking oil

Instructions

  • Mix all the ingredients together.
  • Heat up a pan or a wok, add 1tsp of vegetable oil or olive oil (you can use other cooking oil as well) to prevent sticking.
  • Lower to medium heat, pour about 1/3 cup of batter into the pan or wok, and swirl the wok in one direction.
  • Cook until the sides start to peel off the pan or it takes around 2 minutes, then you can flip it.
  • After that, you can put some chicken meat floss on the crepes, and cook for another minute.
  • Lastly, fold the crepes (as per the video tutorial).

Notes

Tips for Making the Perfect Crepes

  • Remember to mix all-purpose flour with water before your pour in the eggs mixture, this will let the flour mix more evenly.
  • Use a stainless steel pan. Your pan needs to heat evenly and lower to medium heat, this is to avoid the crepes burnt.
  • Don't flip the crepes too early. You may need to wait until the surface of your crêpe is start looking dry and the edges are starting to lightly brown (it will take around 2-3 minutes) before you try and flip your crepe. If you flip it too early it will tear.
