Chinese Eggplant with Pork Slices

Chinese eggplant with pork slices (猪肉片爆炒茄子) is one of my favorite dishes. This cuisine only required two main ingredients which included Chinese eggplant (qie zi), pork slices, garlic, scallion, and chilies. The dish can be prepared either in a pan or wok and it only takes 15 minutes to complete. It is great to serve with rice.

Ingredients

Main Ingredients

  • 1 Chinese eggplant medium-sized
  • 150 gram pork slices
  • 2 cloves garlic
  • 10 gram scallion
  • 1 chilies pepper small

Seasoning Ingredients (To season the pork slices)

  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tsp corn flour
  • 1/2 tsp salt
  • 1/2 tsp white pepper

Seasoning Ingredients (The other seasoning)

  • 1/2 tbsp salt
  • 1 tbsp soybean paste
  • 1/2 tbsp sugar

Instructions

  • Cut the pork into slices and season it with all the ingredients shown above. Put it in refrigerator for 3 -5 hours.
  • Cut the Chinese eggplant into small pieces. Sprinkle some salt on the eggplant. Let it rest for 30 – 60 minutes.
  • Remove the extra water from the eggplant and drain it. Set aside.
  • Heat up a pan/wok with 1 tbsp oil. Put in half portion of scallion and chopped garlic into the pan/wok. Fry it for 30 seconds.
  • Put in the pork slices. Fry it under medium heat for 2 minutes.
  • Add in the seasoning (soybean paste and sugar) and fry for another minute.
  • Put in the Chinese eggplant and fry for 2 minutes.
  • Add in 1 cup of water and let it cook for 5 minutes under medium-low heat.
  • Add in the scallion and chilies pepper and stir-fry for 30 seconds.
  • Done and serve immediately.
