Chinese Almond Cookies

Almond cookies (杏仁曲奇) are one of the popular Chinese New Year cookies and they are super easy to make. Tools needed for baking Chinese almond cookies include a mixing bowl, rubber spatula, sieves, baking tray, baking sheet, and the oven. My family loves almonds very much and these Chinese almond cookies will just simply disappear from the container after a few days in the house. What do the almond cookies taste likes? Well, they are lightly sweet, with some saltiness, and flavor of the nuts. Almond cookies have a crisp bite and sandy crumbly texture. Most importantly, when do it right, the almond cookies always bring a nice almond flavor into your mouth when you give them a bite. A cup of coffee or tea is the best combination with almond cookies.

Ingredients

  • 140 gram all-purpose flour
  • 80 gram ground almond
  • 80 ml corn oil
  • 80 gram sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 5 gram diced almond
  • 1 egg yolk

Instructions

  • Prepare a mixing bowl and a sieve. Put the flour, ground almond, sugar, baking soda, baking powder, salt through a sieve.
  • Whisk to combine all the ingredients evenly.
  • Add the cooking oil.
  • Use the rubber spatula and roughly mix it.
  • Use a clean hand to work it into a non-sticky dough.
  • Take about 10 - 11 grams of the cookie dough and roll it into a ball. Repeat with the rest of the dough and place it on the baking sheet.
  • Mix an egg yolk with 1 tsp water. Spread a layer of egg yolk liquid on each of the cookies.
  • Place some diced almond on it after the egg yolk liquid.
  • Spread another layer of egg yolk on each of the cookies after some diced almond.
  • Preheat the oven to 170 degrees Celsius for 10 minutes. Put the cookies in the oven and bake them for 20 minutes.
  • Take out the tray and allow them to cool completely. Store in an airtight container.
