Stir-fry Chinese Leeks with Roasted Pork

Stir-fry Chinese leeks with roast pork (蒜炒烧肉) is an authentic Chinese New Year cuisine in Malaysia. It is delicious and goes well with steamed rice. During Chinese New Year time, most families like mine will always have a lot of leftovers (eg. roasted meat, roasted pork, roasted duck) after the prayer process. Normally, I will use the leftovers roasted pork to stir-fry with Chinese leeks. This dish is best to cook during the CNY time because of the beautiful Chinese name of Chinese leeks, 蒜 (Suàn) which signifies prosperity (money counting). The dish is a simple combination of roasted pork, Chinese leeks, and chopped garlic.

Ingredients

  • 300 gram roasted pork
  • 600 gram Chinese Leeks
  • 3 cloves Garlic chopped

Seasoning

  • 1 tbsp cooking oil
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp shaoxing wine
  • 1 tsp dark soy sauce

Instructions

  • Pour 1 tbsp cooking oil into the medium heat wok or pan (no need to put too much oil because the roasted pork will seep out some pork oil during the cooking process).
  • Add garlic, stir-fry it until fragrant.
  • Add sliced roasted pork and stir-fry for 1 minute with medium heat. Add 1/2 tsp of salt. Stir-fry for 1 minute.
  • Drain out the sliced roasted pork.
  • Add in Chinese leeks and stir-fry for 1 minute. Add in 3-5 tbsp water (this will help to soften the Chinese leeks).
  • Add in sliced roasted pork, stir-fry for 30 seconds.
  • Add in seasoning (1 tsp sugar, 1/2 tsp salt, 2 tsp soy sauce, and 1 tbsp oyster sauce). Stir-fry for 30 seconds. Add in 1 tsp dark soy sauce and stir-fry for another 1 minute.
  • Add in 1 tbsp Shaoxing wine 15 seconds before switching off the heat.
  • Done and serve immediately.
