Chinese Red Spinach Soup

Chinese Red Spinach Soup (红苋菜汤) is a typical and authentic Chinese homecooked soup. This dish is simple and easy to serve everyday. The dish only takes 20 minutes. In this recipe, dried anchovies are used. You can substitute dried anchovies with mushroom or chicken stock, or any Chinese soup you are making that day. Red spinach good to improve the blood flow system and it contains iron (very suitable for those who lack of iron). Besides that, spinach rich in anti-oxidant which can help to eliminate the toxins from our body. Spinach also can fights some of the respiratory disease.

Ingredients

  • 300 gram Red Spinach
  • 150 gram Dried Anchovies
  • 5 slices Ginger
  • 1 tsp Salt
  • 10 gram Goji Berries
  • 2 tbsp Cooking Oil

Instructions

  • Add 2 tbsp cooking oil in the wok. Heat over medium-high heat.
  • When the cooking oil is hot enough, add ginger and stir-fry until it fragrant.
  • Add dried anchovies. Place it evenly in the oil and stir-fry frequently until it turn to golden brown colour and fragrant.
  • Add in 1000 ml water in the wok. Bring it to boil. Add 1 tsp salt. Reduce the heat to medium-high heat and simmer for 10 minutes.
  • Drain out the dried anchovies.
  • Add in the Goji Berries. Boil for 1 minute.
  • Add in the red spinach. Soak the red spinach into the soup. Bring it to boil. Close the lids and simmer for 5 minutes.
  • Turn off the heat and serve immediately.
