Egg fried rice (蛋炒饭) is a typical Chinese cuisine. Today I will present the most simple and quick Chinese egg fried rice recipe. It is extremely easy to prepare and modify with whatever vegetables you have on hand, The fried rice is great with egg, string bean, scallion, garlic, ginger and some light seasonings. At the end, the rice is well mixed with the egg. It is fine to use wok or pan to cook the dish. Believe me, you will be addicted for this recipe.

How to Make Most Simple Egg Fried Rice?

  • Crack the eggs into a small bowl. Add 1/2 tbsp soy sauce and 1/2 tsp pepper. Beat them together.
  • Heat a wok with 2 tbsp of oil over medium heat. Once the wok is hot, add the scallion, ginger, garlic, stir-fry until it fragrant.
  • Add the string beans and 1tsp salt and stir-fry until it soft.
  • Add the cooked overnight rice and stir-fry for 30 seconds. Add 3 tbsp soy sauce and 2 tsp sesame oil. Stir-fry for another 30 seconds.
  • Put the rice and the string beans aside. Pour in the eggs and stir-fry it. Then stir to combine with the rice with string beans, continue sautéing the rice. Add 1/2 tsp salt. Stir-fry for another 2 minutes.
  • Done and serve immediately.

Tips to Cook A Good Egg Fried Rice

Use Cold Rice

Fried rice is usually a dish that you make to repurpose the leftover cooked rice from the day before. Don’t use freshly cooked rice, which may yield fried rice with a soft texture. However, if you didn’t cook the rice a day before, here is a little tip that I use. Spread a layer of freshly cooked rice onto a large baking tray evenly and put it into the refrigerator for at least 1 hour. (the longer the better)

Use High Heat

This will help fry and brown the rice and veggies well, and will also help prevent the rice from steaming in the pan instead of frying. Besides, high heat also can increase the “Wok Hei” (锅气), which is to increase the aroma of the egg fried rice.

Stir Frequently

This can help the egg fried rice heat up and cook evenly, to preventing burning and to combine ingredients, and create uniform flavor dispersal.
